My viral keto peanut butter mousse recipe is FINALLY coming to the blog. I posted a video of this recipe on Instagram back in January, and planned to send it out to anyone who commented. I never expected the post to amass over 40,000+ comments, and over 6+ million views. It became virtually impossible for me to respond manually to every single comment, and I felt terrible that many of you weren’t able to get your hands on the recipe. That’s why I decided to bring it to the blog for everyone to enjoy!
The recipe uses just a few very simple ingredients, that when combined together whip up into a delicious, fluffy concoction that’s very low in carbs, but oh, so satisfying. I feel like it has tons of opportunities for flavor variations, as well, that I’m going to need to start testing out. Peanut butter + chocolate is one of my all time favorite combinations, so it came first.
All you’ll need to make this is:
- cream cheese – feel free to use full fat or reduced fat, depending on your preferences. I used full fat.
- peanut butter – I used creamy unsweetened peanut butter.
- heavy cream – this is important for the whipped, fluffy texture.
- powdered sugar-free sweetener – I used a blend of erythritol and monk fruit. This should have the texture of confectioners sugar.
- sugar-free peanut butter cups – there are plenty of store-bought options these days, however you can also make your own using a mold, melted sugar-free chocolate chips, and peanut butter.
The mixture will start out looking like frosting, then will almost double in size and become super thick, fluffy, and mousse-like as you add the cream and continue beating it. Serve immediately for the ultimate whipped & fluffy experience, or refrigerate before enjoying for a more cheesecake-like texture.
I hope you enjoy this super simple, yet delicious concoction! What flavor should I make next?!
Xo,
Sarah
