Low Carb Cookie Crisp Cereal
Ingredients
- 6 tbsp coconut flour
- 1/4 cup granulated sugar-free sweetener
- 1/2 tsp xanthan gum
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter melted
- 1 tsp vanilla extract
- 1/4 cup sugar-free chocolate chips chopped
Instructions
- Preheat oven to 325°F. Line two baking sheets with parchment paper.
- Combine all dry ingredients in a bowl. Add melted butter and vanilla, and stir until combined.
- Add chopped chocolate chips (even mini chocolate chips will be too big).
- Get a friend to help you form the dough into tiny, thin discs, about 1/2 inch wide. Place each one on the baking sheet.
- Bake for 5-6 minutes, until very lightly golden on the edges. Cookies will still seem soft when they come out, but crisp up as they cool.
- Allow to cool completely. Add a serving to a bowl, and add keto-friendly milk of choice
- Enjoy!
