Ingredients
½cupblanched almond flour
¼cupcoconut flour
½cupallulose sweeteneror sugar-free sweetener of choice
1 ½tspbaking powder
¼tspsalt
1ripe large banana
3eggs
1tspvanilla extract
½cupunsalted butter
Instructions
Preheat oven to 350°F. In a bowl, combine all dry banana bread ingredients.
In a separate bowl, combine mashed banana, eggs, and vanilla. Add dry into wet, and pour in melted butter as you mix. Stir until smooth.
Pour into parchment lined 8x4-inch loaf pan, and bake for 33-37 minutes. Allow to cool.
Slice, and enjoy!
Notes
I highly recommend using allulose in this recipe for the best flavor, texture, and browning effect. However, you can also use other granulated sweeteners such as erythritol, coconut sugar, or cane sugar (if you don't need super low carb).
