These keto French toast sticks are rich, buttery, and packed with 10g of protein per serving—no protein powder needed. A cozy, low carb breakfast that’s perfect for meal prep or weekend brunch.
Allow eggs, butter, and cream cheese to come to room temperature.
Preheat oven to 350 °F Grease an 8x4 inch loaf pan and line with parchment paper for easier removal.
Combine first four ingredients in a high-speed blender. Blend until smooth. Add remaining ingredients and pulse until combined.
Pour batter into the pan, and bake about 50 minutes to 1 hour, or until firm in the center.
Allow to cool. Refrigerate for a few hours or overnight before slicing to use for the french toast sticks.
Slice into approximately 24-36 stick shapes, or whatever size and shape you desire.
Heat a tablespoon of butter in a skillet over low-medium heat. Fry sticks in batches, turning until golden brown on all sides.
Optional: Dip french toast sticks in mixture of 1-2 tbsp granulated sugar-free sweetener mixed with 1/2 tsp cinnamon to coat.
Dunk in sugar-free syrup, and enjoy!!!

Servings: 6 servings comprised of about ~4-6 sticks per serving.Tip: Pre-made sticks can be stored in the fridge until ready to make French toast. Fry and heat immediately before serving.
