This viral keto peanut butter mousse is fluffy, creamy, and peanut buttery, with only 3 net carbs per serving — this reminds me of my favorite childhood soft serve except totally low-carb and sugar-free. The recipe is so easy and you probably have all the ingredients in your kitchen already!
Combine cream cheese and peanut butter in a bowl. Beat together with electric mixer.
Add powdered sweetener (sift if needed to remove clumps) and beat again until combined.
Add heavy cream 1/4 cup at a time, and continue beating in between until mixture becomes very smooth, thick, and fluffy!
Fold in chopped peanut butter cups. Chill or freeze if desired. Serve and enjoy!
