These keto snowball cookies are every bit as pillow soft and buttery as the traditional sugar-filled version. Perfect for Christmas cookie swaps, holiday parties, or leaving out for Santa!
¼cupsugar-free chocolate chipsoptional, or chopped pecans, walnuts, or add-in of your choice
½cuppowdered sweetenerfor rolling
Instructions
Preheat oven to 350°F and line a baking sheet with parchment paper.
In a mixing bowl, beat butter and cream cheese together until smooth and creamy. Add sweetener and beat again. Add egg yolk, salt, and vanilla and beat again until combined.
Add flours and beat again until dough forms. Fold in chocolate chips, or add-ins of choice, if using.
Form into 12 one-inch balls, and place on baking sheet. Press down slightly to desired thickness, as they won’t spread much while baking.
Bake for 10-12 minutes. Allow to cool slightly, so that the cookies are still warm but won’t burn your fingers.
Place powdered sweetener in a shallow dish. Roll warm cookies in powdered sweetener until they have a snowy appearance.
