Ingredients Breakdown
Blanched Almond Flour
This gives the shortbread its tender, buttery texture. It’s naturally low in carbs and keeps the bars grain-free and gluten-free.
Salted Butter
Used in both the shortbread and keto caramel, butter is essential for richness and structure. Salted butter adds flavor, but unsalted works fine with a pinch of salt.
Granulated Allulose Sweetener
This is my top choice for the keto caramel because it melts and behaves like traditional sugar without crystallizing like erythritol. If you don’t need your Twix bars to be sugar free, feel free to use regular sugar.
Heavy Cream
Cream gives the keto caramel sauce its luscious, creamy body. It thickens as it simmers and helps give the caramel that satisfying chew.
Sugar-Free Chocolate Chips
These create the smooth chocolate shell. Use any stevia- or erythritol-sweetened variety that melts well. Feel free to add 1-2 tsp of butter or coconut oil to your chocolate chips to help them melt.
How to Make Homemade Twix Bars
Step 1: Make the Shortbread Base
Preheat your oven and line an 8×8-inch pan with parchment paper. Mix the almond flour and softened butter in a bowl until a dough forms. Press it evenly into the pan and bake until just golden. Let cool completely.
Step 2: Prepare the Keto Caramel
In a saucepan, melt the butter over medium-low heat. Stir in the allulose and cook until it dissolves completely. Add the heavy cream and increase the heat slightly. Simmer 10–15 minutes, stirring occasionally, until thick and golden. It may foam while cooking—this is normal and will calm down as it cools. Stir occasionally while it thickens further.

Step 3: Layer the Caramel
Pour the cooled caramel over your shortbread and spread it evenly. Place in the fridge until fully set—about 45 minutes to 1 hour.
Step 4: Slice and Dip in Chocolate
Once the bars are firm, remove from the pan and slice in half, then slice each half into 10 pieces to create 20 healthy homemade Twix bars. Dip each bar into melted sugar-free chocolate and place on wax or parchment paper to harden.
