granulated sugar-free sweetener

xanthan gum

tsp
baking soda

unsalted butter
melted

vanilla extract

sugar-free chocolate chips
chopped
Instructions
Preheat oven to 325°F. Line two baking sheets with parchment paper.
Combine all dry ingredients in a bowl. Add melted butter and vanilla, and stir until combined.
Add chopped chocolate chips (even mini chocolate chips will be too big).
Get a friend to help you form the dough into tiny, thin discs, about 1/2 inch wide. Place each one on the baking sheet.
Bake for 5-6 minutes, until very lightly golden on the edges. Cookies will still seem soft when they come out, but crisp up as they cool.
Allow to cool completely. Add a serving to a bowl, and add keto-friendly milk of choice
