Combine softened cream cheese and allulose until sweetener has fully dissolved. Whisk in remaining ice cream ingredients.
Process the mixture in your ice cream maker of choice according to the machine's instructions (I used my Ninja creami after freezing in the pint container for 12 hours).
Combine all cookie dough ingredients until dough forms. Form into little balls.
Once ice cream is ready, gently stir in the cookie dough and top each serving with extra cookie dough if desired. Enjoy!

This cookie dough recipe makes a big batch, enough for more than one batch of ice cream so you’ll have extra to enjoy!
Nutritional information takes into account 1/4 of the cookie dough.
Feel free to substitute the separate whole milk and heavy cream for 1 3/4 cup half & half. You can also substitute the milk with another milk of choice.
