There’s truly nothing better than homemade ice cream….but add cookie dough, make it low-carb and keto-friendly, and you have the best homemade ice cream possible. So creamy, sweet, full of pure vanilla flavor with a generous amount of low-carb, gluten-free cookie dough mixed throughout and added on top. There’s nothing worse than cookie dough ice cream that doesn’t have enough cookie dough in it…that’s why I like making my own so I can add as much as I want to.

The base of this keto ice cream recipe is super simple (only 5 ingredients) and you probably have most of the ingredients already on hand.

Keto Ice Cream Ingredients

  • Heavy cream – the key to a classic ice cream flavor
  • Whole milk, or milk of choice – to make sure it’s not too rich
  • Pure vanilla extract – it’s important to use high quality vanilla for best flavor!
  • Allulose sweetener – this is an all natural sugar-free, zero net carb sweetener that works very well for ice cream because it doesn’t crystalize in cold temperatures (like many sugar-free sweeteners do) and keeps your ice cream softer even when it’s been in the freezer for a while.
  • Cream cheese – just a small amount helps emulsify the sweetener!

After these ingredients are whisked together, simply add the mixture to your ice cream maker of choice and process according to the machine’s instructions. I used my Ninja Creami. Feel free to stop here if you just want simple and delicious vanilla ice cream, or move on to the next steps to add the cookie dough.

After you have your vanilla ice cream prepared, whip together the cookie dough recipe and add as much as your heart desires! You can never have enough in my opinion 😉

Ingredients
  

Ice cream:

  • 1 tbsp cream cheese softened
  • ½ cup allulose sweetener
  • 1 tsp pure vanilla extract
  • 1 cup heavy cream
  • ¾ cup whole milk⠀⠀⠀⠀⠀⠀⠀⠀

Cookie dough:

  • 1 stick unsalted butter softened
  • cup sugar-free sweetener of choice
  • 1 cup blanched almond flour
  • 3 tbsp coconut flour
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • cup sugar-free chocolate chips

Instructions
 

  • Combine softened cream cheese and allulose until sweetener has fully dissolved. Whisk in remaining ice cream ingredients.
  • Process the mixture in your ice cream maker of choice according to the machine's instructions (I used my Ninja creami after freezing in the pint container for 12 hours).
  • Combine all cookie dough ingredients until dough forms. Form into little balls.
  • Once ice cream is ready, gently stir in the cookie dough and top each serving with extra cookie dough if desired. Enjoy!

Notes

  • This cookie dough recipe makes a big batch, enough for more than one batch of ice cream so you’ll have extra to enjoy!
  • Nutritional information takes into account 1/4 of the cookie dough.
  • Feel free to substitute the separate whole milk and heavy cream for 1 3/4 cup half & half. You can also substitute the milk with another milk of choice.

  1. I’m not sure exactly how to make this. Up in the text, you mention heavy cream and whole milk as separate ingredients, but the recipe shows “1 ¾ cup half & half”, and an empty bullet following it. Is the half & half a substitute for the heavy cream and whole milk?
