Ingredients
- ยผ cup unsalted butter room temp
- ยผ cup cream cheese room temp
- ยผ cup powdered sugar-free sweetener*
- 1 egg yolk
- โ tsp salt
- 1 tsp vanilla extract
- 1 cup blanched almond flour
- 2 Tbsp coconut flour
- ยผ cup sugar-free chocolate chips optional, or chopped pecans, walnuts, or add-in of your choice
- ยฝ cup powdered sweetener for rolling
Instructions
- Preheat oven to 350ยฐF and line a baking sheet with parchment paper.
- In a mixing bowl, beat butter and cream cheese together until smooth and creamy. Add sweetener and beat again. Add egg yolk, salt, and vanilla and beat again until combined.
- Add flours and beat again until dough forms. Fold in chocolate chips, or add-ins of choice, if using.
- Form into 12 one-inch balls, and place on baking sheet. Press down slightly to desired thickness, as they wonโt spread much while baking.
- Bake for 10-12 minutes. Allow to cool slightly, so that the cookies are still warm but wonโt burn your fingers.
- Place powdered sweetener in a shallow dish. Roll warm cookies in powdered sweetener until they have a snowy appearance.
- Enjoy!
