Ingredients
  

  • ยผ cup unsalted butter room temp
  • ยผ cup cream cheese room temp
  • ยผ cup powdered sugar-free sweetener*
  • 1 egg yolk
  • โ…› tsp salt
  • 1 tsp vanilla extract
  • 1 cup blanched almond flour
  • 2 Tbsp coconut flour
  • ยผ cup sugar-free chocolate chips optional, or chopped pecans, walnuts, or add-in of your choice
  • ยฝ cup powdered sweetener for rolling

Instructions
 

  • Preheat oven to 350ยฐF and line a baking sheet with parchment paper.
  • In a mixing bowl, beat butter and cream cheese together until smooth and creamy. Add sweetener and beat again. Add egg yolk, salt, and vanilla and beat again until combined.
  • Add flours and beat again until dough forms. Fold in chocolate chips, or add-ins of choice, if using.
  • Form into 12 one-inch balls, and place on baking sheet. Press down slightly to desired thickness, as they wonโ€™t spread much while baking.
  • Bake for 10-12 minutes. Allow to cool slightly, so that the cookies are still warm but wonโ€™t burn your fingers.
  • Place powdered sweetener in a shallow dish. Roll warm cookies in powdered sweetener until they have a snowy appearance.
  • Enjoy!
