Why This Keto Cookie Dough Cake Recipe Is the Best

1. Soft, Bakery-Style Texture

The base of this keto cookie dough cake is ultra moist and filled with chocolate chips baked throughout. It mimics that classic cookie cake flavor while staying low carb and gluten-free.

2. Real Cookie Dough Inside and On Top

This isnโ€™t just โ€œcookie dough flavored.โ€ There are actual pockets of cookie dough in the cake as well as scattered on top of the frosting for doughy texture in every bite.

3. Easy but Impressive

Using my favorite keto yellow cake mix as the base makes this recipe simple and manageable. It looks like a show-stopping dessert, but the steps are straightforward and beginner-friendly.

Story Time

Before we get into the recipe, I want to share something that feels full circle. In 2014, I started my @sarahsfitfood Instagram account. I had just gotten interested in healthier eating and working out, and instead of just following food bloggers from my personal account, I decided to create a separate โ€œfood and fitnessโ€ page of my own.

At first, I was just posting random meals and workouts. I remember being so excited when I hit 100 followers. As a lifelong baker, one of my biggest goals was figuring out how to keep dessert in my life almost every single day โ€” just in a healthier way. One of the first โ€œhealthy dessertsโ€ I ever created was a flourless chocolate cake made with sweet potato, coconut oil, Greek yogurt, cocoa powder, and protein powder. It sounds weirdโ€ฆ but it was SO good.

That recipe ended up getting 10x more engagement than anything I had posted before. At the time, I had around 2,000 followers. That was the moment I realized that healthier desserts were going to be the focus of everything I built. Over the next few years, I created eBooks, grew my blog, and eventually started getting messages from people who loved the recipes but didnโ€™t always have time to bake everything from scratch.

And honestly? I get it. Sometimes I donโ€™t feel like measuring out multiple different alternative flours and sweeteners either.

Thatโ€™s what led me to create FitBake โ€” a way to make low carb, gluten-free, keto-friendly desserts feel as easy as a classic boxed cake mixโ€ฆ but without the sugar or white flour. This keto cookie dough cake is exactly that kind of recipe. It uses a soft yellow cake base, real almond flour cookie dough mixed in and pressed into the top, and creamy vanilla buttercream frosting. It gives you that nostalgic chocolate chip cookie cake vibe โ€” but with just a fraction of the carbs.

Now letโ€™s make it.

Ingredients Breakdown

See recipe card at the end of the post for full ingredient measurements and units.

FitBake Yellow Cake Mix

This keto-friendly yellow cake mix forms the base of the keto cookie dough cake. It creates a soft, buttery yellow cake that stays ultra moist and fluffy while remaining low carb and gluten-free. The mix has several preparation options to choose from, depending on if you want lower fat/calories, or non-dairy.

Sugar-Free Chocolate Chips

These are folded into the cake batter and mixed into the cookie dough. They add classic chocolate chip cookie flavor without added sugar. Feel free to use any brand you like best.

Blanched Almond Flour

Almond flour is the main ingredient in the keto cookie dough. I use a finely ground blanched almond flour for best appearance and texture. It’s totally safe to eat raw, and also keeps things gluten-free and low-carb.

Powdered Sugar-Free Sweetener

Powdered sweetener blends smoothly into the cookie dough, preventing any gritty texture and keeping the flavor balanced. I usually use an erythritol/monk fruit blend, but you can also use allulose or another powdered sweetener if you prefer.

Salt

A small amount of salt enhances the sweetness and rounds out the cookie dough flavor.

Butter

Softened butter gives the cookie dough its rich, classic taste and smooth consistency.

Vanilla Extract

Adds to the classic cookie dough flavor profile.

FitBake Vanilla Buttercream Frosting

My favorite pre-made keto vanilla frosting makes the recipe incredibly easy and convenient. It spreads easily and pairs perfectly with the chocolate chip cookie dough pieces. However, feel free to use a homemade frosting if you prefer.

How to Make Keto Cookie Dough Cake

1. Prepare the Cake Batter

Preheat your oven to 350ยฐF. Prepare the yellow cake mix according to package instructions. Fold in the sugar-free chocolate chips until evenly distributed.

2. Bake the Cake

Spread the batter evenly into a parchment-lined 8ร—8-inch pan. Bake according to package instructions, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely.

3. Make the Keto Cookie Dough

In a mixing bowl, combine almond flour, powdered sweetener, and salt. Add softened butter and vanilla extract. Stir until a dough forms, then fold in chocolate chips. Taste and adjust sweetness if needed. Roll the dough into 9 balls.

4. Add Cookie Dough to the Cake

Once the cake is fully cooled, use a spoon or knife to create 9 shallow holes evenly spaced across the top. Slice each cookie dough ball in half and place one half into each hole, flat side facing up so it sits flush with the top of the cake.

5. Frost the Cake

Spread vanilla buttercream evenly over the surface of the cake, covering the embedded cookie dough pieces.

Chop the remaining cookie dough halves into small pieces and scatter them over the frosting.
