Ingredients
Blondies:
- 2/3 cup coconut flour
- 2/3 cup powdered sugar-free sweetener
- 1/2 tsp baking powder
- 1/2 tsp salt

- 1/3 cup sugar-free white chocolate chips

- 1 tsp vanilla extract
- 1/2 tsp peppermint extract
Ganache:
- 1/2 cup heavy cream
- 3/4 cup sugar-free white chocolate chips
- 1/2 tsp peppermint extract
- 2 tbsp crushed sugar-free peppermint candy optional
Instructions
- Preheat oven to 325°F. Line an 8x8 square baking pan with parchment paper.
- In a mixing bowl, combine the first four blondie dry ingredients.
- Heat butter until it is almost fully melted, then add 1/3 cup peppermint chips to the warm butter. Heat slightly more if necessary to melt the chips. Stir until smooth.
- Add the melted butter/peppermint white chocolate mixture to the dry ingredients, and stir until combined. Make sure eggs have been left out a few hours so they are not cold. Add eggs, vanilla extract, and mint extract. Stir until combined.
- Spread batter into lined pan, and bake for 25-30 minutes, being careful not to overbake. Allow to cool.
- To make ganache, heat cream over low-medium heat until it starts to bubble. Turn heat off, add peppermint chips, and allow them to melt. Stir until smooth, and allow to cool.
- Pour ganache over the cooled blondies and spread evenly. Top ganache with peppermint candy if desired. Chill in the fridge for a few hours or until ganache is set.
- Slice into 16 squares, and enjoy!
