There’s truly nothing better than homemade ice cream….but add cookie dough, make it low-carb and keto-friendly, and you have the best homemade ice cream possible. So creamy, sweet, full of pure vanilla flavor with a generous amount of low-carb, gluten-free cookie dough mixed throughout and added on top. There’s nothing worse than cookie dough ice cream that doesn’t have enough cookie dough in it…that’s why I like making my own so I can add as much as I want to.

The base of this keto ice cream recipe is super simple (only 5 ingredients) and you probably have most of the ingredients already on hand.

  • Heavy cream – for obvious reasons
  • Whole milk, or milk of choice – to make sure it’s not too rich
  • Pure vanilla extract – it’s important to use high quality vanilla for best flavor!
  • Allulose sweetener – this is an all natural sugar-free, zero net carb sweetener that works extremely well for ice cream because it doesn’t crystalize in cold temperatures (like many sugar-free sweeteners do) and actually keeps your ice cream softer even when it’s been in the freezer for a while.
  • Cream cheese – just a small amount helps emulsify the sweetener!
