Keto Cookie Crisp Cereal

Ingredients
- 6 tbsp coconut flour
- 1/4 cup granulated sugar-free sweetener
- 1/2 tsp xanthan gum
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter melted
- 1 tsp vanilla extract
- 1/4 cup sugar-free chocolate chips chopped
Instructions
- Preheat oven to 325°F. Line two baking sheets with parchment paper.
- Combine all dry ingredients in a bowl. Add melted butter and vanilla, and stir until combined.
- Add chopped chocolate chips (even mini chocolate chips will be too big).
- Get a friend to help you form the dough into tiny, thin discs, about 1/2 inch wide. Place each one on the baking sheet.
- Bake for 5-6 minutes, until very lightly golden on the edges. Cookies will still seem soft when they come out, but crisp up as they cool.
- Allow to cool completely. Add a serving to a bowl, and add keto-friendly milk of choice
- Enjoy!

Is the xanthan gum a must have ingredients?
I haven’t tried it without. It really helps the dough stay together and the cereal to hold up, otherwise I’m afraid it might crumble.

So I don’t want to use any sugar or sugar substitute at all. What can put in there to take it’s place? Extra coconut flour? Or keto another flour? Tigernut flour?
Hi Phyllis! To be honest, I’m not sure about that. I haven’t tried this recipe without the sugar substitute, so it’s a bit hard for me to say exactly how much extra flour you’d want to use to take its place. You might want to try adding it gradually until you reach the right dough texture.
Can I do coconut sugar and leave out the chocolate chips?
I think that would probably work, but I haven’t tried it myself!
